Adding Link (Stripe's new payment option) as well would be useful 馃檶 cheaper than standard Stripe checkout for UK cards

Definitely. We have just finished upgrading a part of the Stripe integration which allows us to offer Apple and Google pay.
Easier payments = more bookings!
